on wikipedia, they pronounce bruschetta like Carla did. btw, they used a very Italian-sounding voice to play the pronunciation. for the first dish (red peppers marinated), I am totally with you on wanting to jump into a delicious sauce. that dish sounded the most interesting to make as I've never tried sumac but love sour/vinegar flavors... thanks for sharing

I feel like the frozen version of the cocktail would be delicious with some frozen strawberries substituted for the ice during blending 😋. I like to infuse Campari with strawberries and after infusing I could also freeze those strawberries and put them to double use in a frozen cocktail !!

No bacon in traditional carbonara is as much of a lie as Texas Chili can’t have beans. The first trail chili in Texas most likely had beans in it,and it’s also highly likely due to the ww2 lore of carbonara one of the first known carbonara had bacon since one of the ingredients provided to make the dish after US liberation of the region was US army issued bacon. Regardless check out the link for so much history of Carbonara that allows Carlabonara to stand proud next to the guanciale versions. The bellow link even highlights a carbonara in Italy made at a well known sea side restaurant helmed by three-star Michelin chef Mauro Uliassi used fish instead of pork. The lie that it has to be Guanciale is most likely linked to a pride of local ingredients which is a similar reason why after WW2 texas chili recipes after a beef campaign by beef producers in Texas, beans started disappearing in family recipes. There is nothing wrong with an Italian saying they prefer and insist certain ingredients because those hold special memories of a dish they grew up on, vs shaming people for using different ingredients demanding it cannot possibly be called a carbonara. I went for the Cooks Standard tri ply & got myself the Amazon Commercial 12 inch skillet. They work great. Great video. I would also like to add, doing a very large stainless steel stock pot & a carbon steel wok.
